Ceylon cinnamon has a delicate, complex, subtly sweet flavour with floral notes. It’s mild enough to eat by the spoonful. Cassia has a much stronger, spicier, more pungent taste that can be almost harsh in large quantities. 4. Coumarin Content — The Health Difference That Matters

This is the most important difference of all. Cassia cinnamon contains high levels of coumarin — a naturally occurring compound that can cause liver damage when consumed in large amounts. Ceylon cinnamon contains only trace amounts of coumarin — 250 to 1,000 times less than cassia — making it completely safe to consume daily in meaningful quantities.

5. Price
